"An enchilada is a corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations." (en.wikipedia.org/wiki/Enchilada)
"From the Spanish 'enchilar' for 'season with chili.'" (www.nathanbierma.com/archive/169)
This recipe is a great example of inappropriately named food. It is inaccurate to label anything rolled into a tortilla an "enchilada." This dessert, which looks inspired by crepes, may in fact be quite delicious, but it is not an enchilada by any means.
