Peach Pie Cream Cheese Enchiladas

This recipe is a great example of inappropriately named food. It is inaccurate to label anything rolled into a tortilla an "enchilada." This dessert, which looks inspired by crepes, may in fact be quite delicious, but it is not an enchilada by any means.
